currently, my calling is rs secretary and our big gift for the end of the year is a recipe book. now i've been a recipient of many, many rs cookbooks but i never realized how much stinkin work goes into it. well, now i do. so here's a couple of my favs. oh, and i'm not one for measurements so work with me here.
shepherd's pie - but not gross
traditionally, shepherd's pie is made with ground beef (gross) but i decided to do mine with chuck-roast (or any cut of beef). this is a great recipe for left-over veggies and mashed potatoes (like i do).
2 cups beef gravy
assorted veggies- i use carrots, corn, green beans, peas- anything you've got!
any-cut of beef: sliced and cooked. maybe 1/4 inch thick.
4 cups mashed potatoes- the more the better
1/2 cup cheddar cheese
mix the vegetables with the beef. if the vegetables are raw, pre-cook them. if they are frozen, just add them in. pour the gravy over- don't be too liberal! Not too saucy... Top with mashed potatoes and cheese (or skip the cheese to save calories). Bake in the oven for 15-20 min (or until cheese is melted & bubbly). Enjoy.
