the most delicious blueberry strudel casserole eva

ohemgee i have been craving blueberries for weeks now - WEEKS! it crazy, i have cravings now worse then when i was pregnant. but blueberry muffins?? oh goodness, i want i want i want i want. i found this recipe and loved it post-ww and now i know its points value....i still want it. so its def a splurge. and now that blueberries are in season, no better time like the present.


the original recipe i found here- i just have slight modifications....to make it more delicious. and fattening. because honestly, a blueberry muffin without strudel is not worth eating. 


blueberry strudel casserole
serves: 12 [i use an 8x12 casserole dish and cut it into 12 squares]
ww points+: 8 [without strudel- 7]
calories: 282 [239 without strudel]

1/2 cup unsalted butter, room temperature
2 tsp. lemon zest or more — zest from 1 large lemon
7/8 cup* sugar  
1 egg, room temperature
1 tsp. vanilla
2 cups flour
2 tsp. baking powder
1 tsp. kosher salt
2 cups fresh blueberries [i've used frozen before too]
½ cup buttermilk [i never buy buttermilk- i just add a tb of vinegar to my milk and let it cure it]

* 7/8 cup = 3/4 cup + 2 tablespoons


strudel:
2 tablespoons of sugar
1/4 cup flour
1/4 cup cold butter
1 tsp cinnamon sugar
cream butter - landon wondering what i'm doing
add egg, vanilla and such - landon bugged i'm not looking at him
toss blueberries in flour - landon mad i'm ignoring him
blend wet and dry ingredients - landon rolling around in a fit of rage
gently add blueberries - landon content to now be in the action
spread batter in pan - landon eating toys
make strudel - landon throws his toys on the ground
add topping and bake - landon now almost toyless
voila!


Cream butter with lemon and sugar with a hand mixer until light and fluffy. Add egg and vanilla. In a separate bowl, combine 1/4 cup of the flour with the blueberries. In the creamed mixture, add remaining flour, baking powder, and salt. Add buttermilk til smooth and thick. Gently, add blueberry. Grease an 8x12 pan and spread mixture. Top with strudel mix. Cook at 350 degrees for about 35 minutes and let it cool 10 minutes before serving.
